Clearly I was in a baking mood today – not only did we take these adorable Saint Patrick’s Day shamrock cupcakes to the Fish Fry at church, but we also brought a rainbow Saint Patrick’s Day cake – complete with pots of gold! – that I made. The spirit of Saint Patrick was definitely filling the kitchen today…and so was the sweet smell of dessert. Mmmm…
These are super easy and don’t require any official directions – a picture should suffice on how to make these cupcakes. I used a box cake mix in white, dyed it green, and to half the batch piped out a thick white frosting which I covered in green sprinkles. To the other half, I spread a layer of white frosting, piped out a thin green shamrock (dyed some of the white frosting green), and rolled the edges in green sprinkles. Super easy, and perfect to celebrate Saint Patrick’s Day!
